Like a frying pan or skillet, saute pans can be used for stovetop use. However, there is one difference: a saute pan is deeper than a frying pan or skillet. The saute pan has vertical, straight sides designed to prevent spills and hold more ingredients. Saute pans also have a long, single handle, and sometimes, there is a small side handle to help with the additional weight of the ingredients. Plus, saute pans come with a lid to hold in the moisture which makes it perfect for cooking sauces.

    Using a cast iron griddle plate in the oven is a great way to get the flavor and texture of grilling, especially when grilling outdoors isn't possible.  Preheat a baking sheet in the oven over high heat and carefully add food to the cast iron griddle plate.  The high heat of the griddle will help create a delicious sear on your food, mimicking the effects of an outdoor grill.

Modern copper pans—including ours—tend to be lined with stainless steel, which makes for a more durable pan than the more traditional (but much higher-maintenance) tin-lined copper pans.

When it comes down to it, as far as high-temperature searing (as for steaks) goes, the pans are equally efficient. A skillet offers advantages for sautéing, and a sauté pan offers advantages for shallow-frying, moderate-temperature searing (as for chicken pieces), or braising. In an ideal world, you'd have both, but if I had to pick one, I'd go with the skillet, as sautéing is a step in nearly every recipe I make.
